Rhosyn Restaurant opens at Penally Abbey this February!

I am SO excited to share with you that our new restaurant Rhosyn will be opening this February! I hope that the opening of Rhosyn will welcome so many more locals into the Abbey and that diners will enjoy the much more relaxed atmosphere that both the surroundings and our super friendly staff provide. 

Putting together the concept of Rhosyn has been a particularly enjoyable project for us, as it is something we have all worked on together. Jacques has been doing the branding and photography, Mel has been designing, renovating and generally being creative with the original restaurant space whilst Miriam and Lucas have been having fun, maybe a little bit too much fun (!?) revamping the wine and cocktail list. I have the small job of marketing and promoting everyone's hard work and am under strict instructions not to share all of Mel's fabulous plans for the restaurant until it has come together!

But, I can assure you that it will be wonderful..!

I hope to welcome so many of you over the course of the next 6 months of us being a fresh, new, shiny restaurant, but for now, here is a little bit of information about the opening... (eek!).

Rhosyn restaurant opening Friday 8th February

Looking towards the sea in the beautiful village of Penally, Rhosyn will be focusing on celebrating the finest Pembrokeshire produce cooked simply and presented in a beautiful, relaxed setting.

Since taking over the beautiful building of Penally Abbey in the summer of 2014, the Boissevain family has extensively refurbished the beautiful 11-bedroom hotel in the village of Penally. With work primarily focusing on the structure of the building, the bedrooms and grounds, this year the restaurant is taking centre stage. Planning for Rhosyn began in November 2018 as owners Lucas and Melanie Boissevain were determined to create a restaurant that guests visiting the county and most importantly, locals in Pembrokeshire can come to.

Rhosyn restaurant will be serving dinner seven nights a week from 6.30pm-9pm and Afternoon Tea every afternoon from 2pm-5pm. Sunday Lunch will be served on special occasions like Easter Sunday and Mother's Day, as well as for any bookings of 10 people or more. Lucas explains why the opening of Rhosyn is so important to him personally, ‘As a team, we all feel very passionate about the tourism community here in Pembrokeshire and although the hotel has been a joy to run over the past four years, we are ready to provide an offering aimed at everyone who appreciates locally sourced, classic dishes created with passion and care. If there are regional specialities that are simply not available locally we will look to embrace them. We really hope to create a sense of place where our guests can enjoy delicious food and a glass of wine in a relaxed and welcoming environment.

The sea views over Carmarthen Bay to the Gower are stunning and this outlook was what convinced us to acquire the Abbey. The gardens are another love and we’ve worked hard to soften the planting, landscape the grounds and increase the diversity of planting.

So, I’m delighted to be able to now welcome more people to come along and enjoy the space and our hospitality.

Creating the concept of Rhosyn has been a fantastic family affair and the missing part of the jigsaw in what has been an on-going project. We hope that Rhosyn will be subtly different to other restaurants in the area and will serve to complement the already thriving dining scene in both Tenby and Pembrokeshire as a whole.’

Head Chef Richard Browning, formerly the Senior Sous Chef at the wonderful Chewton Glen Hotel in the New Forest, in Hampshire will be heading up the kitchen team. Prior to this, he was at both the 3 Michelin starred Inn at Little Washington in the United  States and The 2 Michelin starred Landhaus Bacher in Austria, so we are thrilled that he is bringing his classic training to develop refined simple dishes with delicious flavours to Penally.

I’m really excited to add to the fantastic product that is Penally Abbey Hotel by working with the team to launch Rhosyn restaurant. The location is perfect, and we are all massively looking forward to the launch’ says Richard.  

On joining the team at Penally Abbey in September 2018, Richard retained the 2 AA Rosettes within his first few months at the hotel. He hopes to build on the quality offered at Penally in 2019 and develop the restaurant's reputation in Pembrokeshire and beyond.

Alongside Richard, Restaurant Manager Miriam Hodge and her team are looking forward to opening a relaxed, informal, welcoming restaurant that enables diners to instantly unwind after a long walk along the beautiful Pembrokeshire coastline or a day spent exploring the incredible castles nearby, celebrating an anniversary or just a special evening with friends. "I'm so proud of what we have on offer at Rhosyn and it has been a long time coming. The food is delicious, our team is full of enthusiasm and the location is incredible. I just can't wait to welcome everyone when we open!" says Miriam. 

As well as the main restaurant, Rhosyn has a beautiful sea facing terrace that is perfect for an alfresco drink in the summer months and an intimate sunroom and bar for guests to enjoy all year round. The Courtyard space is another aspect of Rhosyn restaurant that guests can use to host their own private dinner parties, Afternoon Tea celebrations and everything in between. From buffets to three-course dinners, the Courtyard is perfect and flexible for a slightly larger group celebration (up to 35 guests).
